To keep things running smoothly, I mapped out the station in advance. Here’s what worked for us:

  • Ice buckets: Keep extra bottles chilled in tubs of ice behind the bar.

  • Glasses and straws: Provide a mix of mason jars, coupes and highball glasses, plus reusable straws and swizzle sticks.

  • Signs: A chalkboard or framed sign titled “Build Your Booch” explains how to mix and match.

  • Cleanup: Have compost bins for spent fruit and recycling bins for bottles.

Mixers and garnishes

The fun part is customizing each drink. Prep a variety of mixers and garnishes, inspired by La Rive’s suggestions:

  • Herbs: Mint, rosemary, basil, thyme.

Ingredients:

  • 8 ounces ginger mint kombucha

  • 1 ounce fresh lime juice

  • 1 tablespoon honey syrup

  • A handful of fresh mint leaves

  • Ice and lime wedge for garnish

Steps:

  1. In a highball glass, muddle mint leaves with honey syrup.

  2. Add ice and lime juice.

  • Edible flowers for garnish

Steps:

  1. In a mason jar, muddle the berries with lemon juice.

  2. Add coconut water and stir.

  3. Fill the jar with ice and pour in hibiscus berry kombucha.

  4. Stir lightly and top with an edible flower.
